peanut sesame noodles (vegan & gluten-free) Something Vegan
RECIPE
8 oz. gluten-free noodles (I used corn and rice spaghetti noodles)
1/4 cup peanut butter
3 Tbsp. gluten-free soy sauce
2 tbsp. rice vinegar
2 tbsp. sesame oil
1 Tbsp. organic sugar
1/2 Tbsp. sriracha sauce
1 Tbsp. oil (vegetable, or peanut)
2 cloves garlic, minced
1/2 Tbsp. fresh ginger, grated
1 cup shredded carrot
1 cup shredded cabbage
1 red bell pepper, thinly sliced
Toppings:
Green onions, chopped
Peanuts, chopped
Sesame seeds

Boil the noodles according to the directions on the package. Drain, rinse, and toss with a little bit of oil to prevent sticking. Set to the side. To a bowl, add peanut butter, soy sauce, rice vinegar, sesame oil, sugar, and sriracha. Whisk well, and set to the side. To a wok over medium-high heat, add oil, garlic, and ginger. Stir fry about a minute. Add carrot, cabbage, and red pepper. Stir fry a couple more minutes. Add the noodles, and stir. Add the sauce, and stir until everything is evenly coated. Top each serving with green onions, peanuts, and sesame seeds. Makes about 4-6 servings.

  1. YUM! I tried the broccoli soup you posted a while ago and it's now my favorite soup!! Now I cannot wait to try these noodles!
