Strawberry & banana oats //

1 cup oats
1 cup plant milk (I used coconut milk)
1 cup water
1 banana
Maple syrup
Dessicated coconut

Pesto pasta //

1 garlic clove
Bunch of basil
1/3 cup cashews
1/4 cup nutritional yeast
Juice of a lemon
Salt and pepper
Drizzle of olive oil

250g pasta
Spinach/sundried tomatoes

Maddie’s Miso Soup //

4 spring onions
1/2 – 1 red chilli
Coconut oil
1 clove of garlic
Half block of tofu
Handful of mushrooms
1.5 ltr veg stock
Glug of soy sauce
Approx 200g wholewheatnoodles
Half head of broccoli
2 heads pak choi
1-2 tbsp miso paste

Fried rice //

1 onion
Olive oil
2 cloves of garlic
Thumb of ginger
Half a block of ofu
1 carrot, grated
2 tbsp peanut butter
1 tsp sriracha
1 tbsp maple syrup
2 tbsp soy sauce
Leftover rice (approx. 2 cups)
Splash of plant milk
Juice of a lime/lemon
Handful of spinach

Green thai curry //

1 red onion
2-4 chillies
5 garlic cloves
Thumb of ginger
8 kaffir lime leaves
Juice of a lime
1 tsp lemongrass
2 tsp coriander
2 tsp cumin
Handful fresh coriander
Salt and pepper

Red pepper
Handful of mushrooms
Block of tofu
Coconut oil
2 tbsp thai green curry paste
Half head of broccoli
500ml veg stock
Tin coconut milk

  3. I always find it so interesting to see how different areas anglicize the same word. Pak Choy is called Bok Choy here on the west coast of the U.S.

  6. I love that u cook with a big knife and cutting board. It irritates me when people cut with small knives and tiny cutting boards

  7. Love cheap meals! 🙂 And if raw cashews are out-of-budget for anyone, I've successfully used sunflowers seeds in their place to make pesto, cheese sauces, dressings, and other creamy sauces. Their flavor is less neutral than cashews, but that's nothing you can't work out with the right herbs and seasonings
