Low Carb Tortillas – 2 Ingredients

1 head cauliflower
2.5 – 3 cups shredded mild cheddar cheese
1 egg white

Process cauliflower in food processor to the texture of rice or grits.

Microwave cauliflower for 10 minutes, covered, stirring half way through.

Squeeze out cauliflower in cheesecloth until liquid is removed.

Add cheese, stir and microwave 1-2 minutes or until cheese is melted.

Stir in beaten egg white.

Spread on parchment in thin rounds about 8” in diameter.

Bake at 400 degrees for 12-15 minutes.

Transfer to a spoon handle or rolling pin to and allow to cool in the shape of a taco shell.


Makes 8 servings.

  2. I've made @ketoconnect tortillas and they are so good! WhenI make "hard" shells I mix 1 cup shredded cheddar with 2 tbsp almond flour and 1 tbsp melted butter and bake them like you are baking the shredded cheddar.

  3. I know an easier taco shell that takes 30s, use some Savoy Cabbage and tare off a leaf. 6 grams of carbs per 100 grams and half of that is fiber, not only that, but has a lot of vitamins and minerals that people doing keto need. Makes a great all purpose savory bread/grain replacement. I use it for burger, sausages, tacos, and sandwiches. The leaves are easier to work with than green cabbage plus its cups everything rather well.

  4. Wesley, use a rack out of your oven or fridge to lay your shells over. You can lay the rack on something more stable

  5. I would use the cauliflower tortilla with a cheese crispy tortilla inside it for a true Taco Bell Gordita.

  6. I ABSOLUTELY loved this battle! Question: can ketoconnect's shells be fried in coconut oil like you'd fry up a flour tortilla? I so miss fried flour tortillaz sprinkled with cinnamon and sugar! I do a lower carb version of this treat using Siete Tortillas (almond flour) sprinkled with erythritol and cinnamon and it's amazing, but 1 tortilla has 6g net carbs. If ketoconnect's tortillas can be fried I'd leave out the savory spices and sub with some sweet stuff. Or if ANY of the tortillas would work, can you let me know? Thanks so much! ❤

  7. I just use the mission low carb fajita shells. They are 3 net carbs per shell. Always wanted to try the cheese crunchy shells. Probably could get sliced cheddar and use the microwave for that as well.

  8. Yes! I did receive my air fryer, I couldnt be more thrilled! Thank you to the moon!!! Ill have to try all of these, i have done the cheddar cheese one and its by far been my favorite so far.
