PASTA WITH MUSHROOMS
Heat 3 tbsp. olive oil in a large skillet over high heat until very hot. Add 6 ounces sliced mushrooms, season lightly with pepper, and cook, stirring, for 2 minutes. Lower the heat medium, add 2 tbsp. finely sliced scallions, jalapeno, and garlic and cook for 1 minute. Remove from the heat. Let cool slightly.
Bring a large pot of water to a boil. Add salt and the pasta and cook for 3 to4 minutes, until just tender. Drain, and toss the pasta with mushroom mixture. MARINARA pasta sauce with vegetables was added to pasta (optional).
