green curry (vegan & gluten-free) Something Vegan Green Week
1 cup cilantro stems, chopped
1 shallot, diced
1-2 green chilies, seeded and chopped
3 cloves garlic, peeled
1 stalk lemongrass, outer leaves removed, and yellow part chopped
1 Tbsp. fresh ginger, peeled and chopped
Juice of one lime
1 tsp. organic sugar
1 tsp. salt
1/2 tsp. ground coriander
1/2 tsp. ground cumin
1 (16 oz.) pkg. extra-firm tofu, drained and cubed
1 (13.5 oz.) can coconut milk
1 green bell pepper, sliced
8 oz. fresh green beans, chopped
Zest of one lime
1/4 cup cilantro leaves, chopped
1/4 cup basil, chopped

To a food processor, add cilantro stems, shallot, green chilies, garlic, lemongrass, ginger, lime juice, sugar, salt, ground coriander, and ground cumin. Process until a paste forms. Set to the side. To a greased pan over medium/ high heat, add tofu. Cook, turning occasionally until beginning to brown. Remove from the pan and set to the side. To the hot pan, add the green paste. Stir and cook about a minute. Add coconut milk, and heat to a boil. Reduce the heat to medium/low, and add the cooked tofu, green pepper, green beans, and lime zest. Stir and let simmer until the vegetables are cooked. Add cilantro leaves, and basil, and let cook another minute. Serve over rice. Makes 4-6 servings.
