1-2 teaspoons of coconut oil, butter, or olive oil*
2 large eggs, beaten
a pinch of salt and pepper
2 tablespoons shredded cheese

Crack to eggs in a small bowl and beat with a fork until mixed well.

Heat an 8-inch non stick skillet over a medium low heat.

Melt the oil or butter in the pan and swirl it around to coat the bottom of the pan.

Add eggs to the pan and season with salt and pepper.

Gently move the egs around the pan as they begin to set up. I like to pull the edges of the eggs towards the center of the pan, allowing the loose eggs to spill over.

Continue until your eggs have set up and you have a thin layer of loose egg on the top of the omelet.

Add cheese to one half of the omelette and fold the omelette onto itself to create a half moon.

Slide out of the pan and enjoy.

*Never use a non stick cooking spray in your non-stick skillets. They will ruin your pans. Instead stick to a pat of butter or oil.

4 ounces of wild mushrooms
1 tablespoon goat cheese
1 tablespoon olive oil

Heat olive oil in a small saute pan and add mushrooms. Saute for 5 minutes or so until lightly browned and tender. Seaosn with salt and pepper.

Add mushrooms to omelette and dot in the goat cheese. Fold egg over onto itself, pop on lid for 30 seconds and then serve. Enjoy!

  1. They look delicious!! Perhaps a silly question….but what brand of salt do you use and where do you purchase it?? I know you have said sea salt, but yours does not look as corse as mine!! Also what brand of pans are in this video..

  2. Omelettes seem underrated and overlooked a lot I think. But they are oh-so terrific! THANK YOU for the inspiration!

  3. Hi Dani, I don't know if you'll see this, but I love your channel so much. I am subscribed and when I see the notification, I always click. I also follow you on Instagram. You are beautiful and your recipes/techniques are my favorite on youtube. You and Avantegardevegan. I made my husband an omelette this morning with some sausage, chopped spring onion we had leftover, onions, and a little kale chopped into little pieces. That was the filling and I seasoned the omelette fold with a little adobo. Served it with garlic bread…long comment, but you were my inspiration. Have a wonderful day :). Your subscriber, Mori.
